Identification from the mark: 
Many stainless steel supplies have steel marks on the surface, for example: 13-0, 18-8, etc. The number in front of the short line indicates the amount of chromium the product contains, and the number behind the short line indicates the amount of nickel contained in the product. For example, 13-0 means that it contains only chromium and no nickel, commonly known as "stainless steel"; while 18-8 means that the product contains chromium and nickel, which is stainless steel. Negotiating by sound: Knocking on a stainless steel or 'stainless iron' product can also be used as a method of judgement. Attracting with a permanent magnet: true stainless steel is not attracted to magnets, while 'stainless' can be attracted to magnets. Despite the differences in properties between 'stainless' and stainless steel, both are significantly more resistant to rust and corrosion than wrought iron and cast iron cookware.
